Our chef Lorenzo inherited his passion for cooking from his father Gianfranco. Already at fifteen he was kneading his first Strudels, now one of his specialties. He offers dishes linked to Ladin and Trentino cuisine, but adapted to new dietary indications, that is lightness, flavour and quality. He chooses ingredients from local producers, flavoured with aromatic herbs from our garden. He has a passion for tortelli, which are called “ciajoncie” in the Ladin tradition. He presents them as in the past with figs, polenta, game, beetroot. The menu offers a vegetarian dish on the menu every day, whereas in summer Lorenzo enjoys making a good barbecue.
Goulash with polenta is definitely the dish to come back for.
